Bok Choy and Sesame Salad

In case you, too, want to recreate the Teacher Appreciation Lunch at home for the family, here's the bok choy and sesame salad recipe that feeds millions.  Bon appetit!

2 bunches bok choy
1 red pepper
1 bunch scallions

2 pkgs ramen noodles (any flavor)
1 1/2 c sliced almonds
1/4 c sesame seeds
4 T butter

1 c canola oil
3/4 c sugar
1/3 c white vinegar
1/4-1/3 c soy sauce

Wash bok choy well and dry thoroughly.  Chop entire leaf (white and green parts) to 1/4" - 1/2" dice.  Do the same with bell pepper and scallions.

Break up ramen noodles into small pieces (throw away flavor packet).  Mix with almonds and sesame seeds.  Melt butter in saute pan over low - medium  heat and add mixture.  Cook, stirring almost continuously, until it's all golden brown.  Let cool completely.

Put oil, sugar, vinegar, and soy sauce into a bottle and shake vigorously until all ingredients are combined.

Just before serving, mix veggies and almond/noodle/sesame mixture.  Dress with as much dressing as you'd like.  The almond/noodle/sesame mixture will begin to lose its crunchiness relatively soon so try to combine everything just before consuming.

Serving: Feeds a bunch of hungry teachers.
